CUSTOM CUT SIDES AND QUARTERS OF BEEF
These orders are cut to your specifications, vacuum packed in sealed packages, labeled and flash frozen. They are priced by hanging weight before cutting.
Everything from brisket to ox tail with lots of great steaks, roasts, and ground beef in the middle.
Our butcher will give you a quarter blended from the hind and front quarters with the full variety of cuts but half the weight of a side.
Brisket, shanks, chuck roasts, stew cubes, Delmonico Steaks, back ribs, short ribs, fajita flats, chuck eye steaks and ground beef.
Choose either strip steaks & tenderloin or T-bone & Porter-house, then add sirloin, flank steak, round roasts, shanks & about 1/3 the weight in ground beef.
WHAT IS NEW?
Pork and Lamb We are now raising our own pigs for either fresh or cured pork.
Also we will have lamb later in the season. We have young lambs on the ground, and they will be ready in July or August.
